Filtered vs unfiltered honey
Filtration removes pollen, wax and air bubbles. That improves appearance and shelf presentation, removes the ability to trace the honey's origin, and matters less nutritionally than either side of the argument claims.
Which to choose
Prefer unfiltered or coarsely strained honey if you want traceable provenance and do not mind cloudiness or faster setting. Filtered honey is not inferior and is a reasonable choice for cooking and everyday use. Treat ultrafiltered honey with more suspicion than either, because the reason to remove all the pollen is rarely about the honey.
Why these get compared
Filtration is one of the few honey processing decisions a buyer can see, and it has become a proxy for authenticity in a way it does not entirely deserve. Both sides overstate their case.
