The two rules that cover most of it

Match intensity. A delicate honey with a strong food disappears; a strong honey with a delicate food obliterates it.

Cook with cheap honey. Prolonged heat destroys the aromatic compounds that make an expensive honey expensive. The exceptions are honeys whose character is structural rather than aromatic — buckwheat, chestnut and honeydew hold their malt, bitterness and mineral depth through an oven.
