Storage and shelf life
Does honey expire?
Mostly false
Honey does not spoil the way most foods do, and a best-before date on a honey jar is about quality rather than safety. It can still be ruined: if it absorbs enough moisture — above roughly 20% water — naturally present yeasts will ferment it, and it will smell of alcohol and go frothy. Kept sealed at room temperature, honey stays safe indefinitely while slowly losing aroma and darkening.
Should honey be kept in the fridge?
False
No. Refrigerating honey does nothing useful and actively encourages it to crystallise, because fridge temperatures sit close to the range where glucose comes out of solution fastest. Keep it sealed in a cupboard at normal room temperature, away from strong light and heat. The lid matters far more than the temperature.
Does freezing ruin honey?
False
No. Honey does not freeze solid at domestic freezer temperatures — it becomes very thick and glassy — and freezing is actually the best way to preserve its aroma and prevent crystallisation, because crystals form fastest around 14 °C and barely at all below about -18 °C. It is simply unnecessary for a food that keeps indefinitely anyway.
Is older honey better?
False
No. Honey is stable for a very long time and it does not improve — it slowly loses aroma, darkens, and accumulates hydroxymethylfurfural. A jar five years old is safe to eat and will taste of measurably less than it did when fresh.
Why has my honey changed colour?
True
Honey darkens with age and with warmth, and this is normal rather than a fault. Sugars react slowly with the small amount of amino acid present — the same Maillard chemistry that browns toast — and the reaction runs faster the warmer the jar is stored. The honey is safe; what it has lost is aroma. A honey that has gone paler and cloudy has not changed colour at all, it has crystallised.
Why has my honey separated into layers?
Mostly false
Almost always partial crystallisation: glucose comes out of solution and sinks, leaving a wetter, runnier, fructose-rich layer on top. It is not spoilage and stirring or gentle warming fixes it. The one exception is fermentation — froth, a sharp cidery smell, and a lid that has bulged — and that honey should be thrown away.
Why has my honey fermented?
True
Because it had too much water in it, or picked some up. Honey is preserved by being too concentrated for microbes; above roughly eighteen to twenty per cent water, yeasts that are always present can start working.
Does hot honey go off, and how should it be stored?
It depends
Store it like the honey it was made from — cool, dry, closed, out of the fridge — and follow the date on the jar rather than the folklore about honey lasting forever. A commercial, strained hot honey is stable and dated. A homemade one containing fresh chilli or anything else wet is a short-life preparation, because the low water content that preserves plain honey is exactly what a wet ingredient undoes.
Is it safe to keep garlic in honey?
Not settled
There is no validated domestic process for it, so no keeping time can honestly be given. Garlic is low-acid and mostly water; honey's protection comes from having almost no available water; and a closed jar is near-anaerobic. Those three together are the conditions food-safety guidance treats seriously, and honey's own keeping quality does not cover them. Combining garlic and honey when you eat them raises none of this.
Honey properties
Why does honey crystallise, and has it gone bad?
False
Crystallised honey has not gone bad. Honey holds more glucose than its water can dissolve, so the glucose gradually comes out of solution as crystals. How fast depends mainly on the glucose-to-fructose ratio — acacia can stay liquid for over a year, rapeseed can set inside the comb. To reverse it, stand the jar in water at 40-50 °C; never use a microwave.
Can you eat honeycomb?
True
Yes, wax and all. Beeswax is made of long-chain esters and fatty acids that human digestion does not break down, so it passes through inert — neither nutritious nor harmful. Chew and swallow it or chew and spit it out like gum; both are normal. The one restriction is the usual one: no honey in any form for children under twelve months.
Which honey stays liquid longest?
True
Tupelo, above all — it has the highest fructose share in commerce and genuinely does not granulate. Acacia, sage, jarrah, yellow box, huajillo and the honeydew honeys all stay liquid for a year or more. The common factor is a low glucose-to-fructose ratio, because glucose is the sugar that comes out of solution.
Which honey has the strongest flavour?

Strawberry tree honey is the most bitter honey in wide production and probably the most extreme overall. For sheer intensity, chestnut, buckwheat, oak honeydew, avocado, carob and mad honey are the others at that end — and all of them are honeys where bitterness or savouriness competes with the sugar rather than adding to it.
Which honey has the mildest flavour?

Acacia is the standard answer and deserves it — clean sugar, faint vanilla, and almost nothing that lingers. Huajillo, fireweed, borage, rapeseed, alfalfa, sulla and asphodel are all in the same delicate band. If honey generally tastes too strong to you, these are where to start.
Why does honey taste of flowers?
Mostly true
Because volatile aromatic compounds from the nectar survive into the honey — but only some of them, and rarely intact. Most honeys taste of honey with a suggestion of the plant. A few, notably lavender, orange blossom and meadowfoam, carry the source's own aromatics almost unchanged, and those are the exception rather than the rule.
Why is honey different colours?

Mainly the plant — nectar carries pigments, phenolic compounds and minerals in wildly varying amounts. Honeydew honeys are dark because the sugar picked up a heavy mineral load passing through an insect. Age and heat darken any honey over time, and crystallisation makes it look lighter without changing it at all.
Is beeswax edible?
True
Yes. Beeswax is edible, approved as a food additive, and largely indigestible — it passes through essentially unchanged. Eating honeycomb wax and all is normal and harmless; so is chewing it and spitting it out.
Why is honey sticky?
True
Because it is a concentrated sugar solution with very little free water. The sugar molecules form extensive hydrogen bonds with each other and with any surface they meet, which produces both high viscosity and adhesion — and it is why water dissolves honey instantly.
Why does orange blossom honey not taste of oranges?
True
Because the bees collected nectar from the flower, not juice from the fruit, and the two have almost nothing chemically in common. Orange blossom honey smells of neroli and orange-flower water — the scent of the blossom — while the fruit's character comes from compounds in the peel and flesh that the nectar never carried.
Is bitter honey off?
Mostly false
Almost never. Several honeys are genuinely, deliberately bitter — chestnut, strawberry tree, buckwheat and some eucalypts — and are prized for exactly that in the countries that produce them. Bitterness comes from phenolic compounds in the nectar and is a property of the honey type rather than a sign of spoilage. Honey that has actually gone wrong smells of alcohol and looks frothy.
Why does my honey taste different from the last jar?
True
Because it is a different honey wearing the same label. A varietal name describes the dominant nectar source, not a recipe, and the same hives on the same site produce measurably different honey from one year to the next — different weather, different proportions of the secondary flora, different moment of harvest. Blended supermarket honey is the exception: it is blended precisely to stop this happening.
How can I tell what kind of honey I have?
It depends
You can usually narrow it to a small set and rarely name it exactly. Colour, how fast it sets, aroma and bitterness together rule out most of the catalogue: dark and malty with a bitter finish points at chestnut or buckwheat, near-white and rock-hard within weeks at rapeseed, pale and still liquid after a year at acacia. Only pollen analysis in a laboratory settles it, and no home test will.
Does climate change affect honey production?
It depends
Weather has always dominated honey yields, and it still does — a wet fortnight during the main flow can cost the crop. A decades-long climate trend is a different measurement, and it does not explain any particular bad year.
Is honey bee vomit?
Mostly false
No, though it is closer than 'no' alone suggests. Nectar is carried in the honey stomach — a storage crop that is part of the transport system, not the digestive one — and passed mouth to mouth between bees. Nothing is digested and nothing comes back from the gut. Calling it vomit describes the direction of travel and gets the organ wrong.
Buying honey
Is raw honey better than ordinary honey?
It depends
Better for flavour, yes — raw honey keeps aroma compounds, enzymes and pollen that heating and fine filtration remove. Better for health, no: there is no good evidence that any of that produces a benefit. And 'raw' has no legal definition in most markets, so the word on a supermarket jar guarantees nothing.
Is manuka honey worth the money?
It depends
As a food, no — it is a distinctive earthy honey and far more expensive than honeys most people prefer the taste of. As a health purchase, the evidence does not support it: manuka's methylglyoxal has real antibacterial activity in laboratory tests, but nothing establishes a benefit from eating it. If you want it for the flavour or the novelty, that is a fair reason. If you want it to do something, the case is not there.
Is honey vegan?
False
No. Honey is an animal product, the mainstream definitions of veganism exclude it, and virtually every vegan certification scheme rejects it along with beeswax, propolis and royal jelly. The ethical argument underneath that labelling answer is genuinely contested, including among vegans, but the labelling answer itself is not in dispute.
What is monofloral honey?
It depends
Honey in which one plant species dominated the nectar enough to define its colour, aroma and flavour — acacia, manuka, chestnut, thyme. It means predominantly, never purely: bees cannot be confined to one species, and the thresholds that define dominance differ by country and by honey, with several well-known types having no legal definition at all.
Why is some honey so expensive?
It depends
Four things, in roughly this order: a short or unreliable flow, a small growing area, difficult harvest, and reputation. The first three are genuine costs and the fourth frequently is not — manuka's premium rests on a chemical marker, tupelo's on a two-week window in one river basin, and several others on a name.
How is honey graded?
It depends
There is no single system. The USDA grades honey on clarity, flavour, moisture and freedom from defects — and it is voluntary. Colour is graded separately on the Pfund scale. The EU sets compositional limits rather than grades. And premium ratings like UMF measure one chemical and nothing else.
How is honey tested for authenticity?
It depends
Several methods, none of them complete. Carbon isotope analysis catches cane and maize syrups but misses rice and beet. NMR profiling compares a sample against a reference database and catches far more. Pollen analysis establishes floral and geographic origin. The adulterators adapt to each test as it becomes standard.
Can a laboratory prove honey is fake?
It depends
It can build a strong case and it rarely settles the question with one test. Each method answers part of the problem, several of them depend on comparing the sample against a reference collection of honeys believed genuine, and a conclusion is normally assembled from a pattern of findings rather than read off a single result.
Is organic honey really organic?
It depends
It certifies how the beekeeper managed the hives, not where the bees flew. Since a colony forages over several kilometres of land nobody controls, organic honey certification is a statement about husbandry and siting rather than a guarantee of a pesticide-free landscape.
Is hot honey real honey?
It depends
The honey in it is real honey. The product is not honey in the legal sense: the compositional standards define honey as what bees make and allow nothing to be added, so a chilli-infused jar is a honey-based preparation rather than honey. It is also not a honey variety — acacia and chestnut differ because of what the bees foraged, hot honey because of what a person added afterwards.
Honey and health
Is honey healthier than sugar?
Mostly false
Only marginally, and not enough to matter. The WHO classifies honey as a free sugar alongside table sugar, and guidance to limit free sugars applies to it identically. Honey is sweeter by weight so slightly less is needed, and it contains trace compounds sugar lacks — but at any realistic intake those are nutritionally negligible. Choose honey because it tastes of something, not because it is better for you.
Does honey help a cough?
Mostly true
Yes, within limits. In children over one year with an acute cough, honey reduces cough frequency and severity and improves sleep compared with no treatment, and clinical guidance in several countries names it as a self-care option. It relieves symptoms in an illness that would resolve anyway; it does not treat the infection. Never give honey to a baby under twelve months.
Can babies eat honey?
False
No. Honey must not be given to infants under twelve months old, in any form. It can contain dormant Clostridium botulinum spores, which an adult's gut flora suppresses and an infant's immature gut sometimes does not. This applies to raw and pasteurised honey equally, and to honey cooked into food — the spores survive heat. After the first birthday, honey is fine.
Does eating local honey help with hay fever?
Mostly false
No, and the reason is more decisive than the trials. Hay fever is caused by wind-blown pollen from grasses and trees, which bees do not visit; honey contains small amounts of pollen from insect-pollinated flowers instead. A controlled trial of local unfiltered honey found no benefit over honey-flavoured placebo, and no clinical guideline recommends it.
Can dogs eat honey?
It depends
In small occasional amounts, honey is generally safe for a healthy adult dog — it is not toxic to them the way chocolate, xylitol or grapes are. It is still concentrated sugar, so it is unsuitable for diabetic, overweight or immunocompromised dogs and for puppies, and any question about treating a specific condition belongs with a vet rather than a website.
Is darker honey healthier?
Mostly false
Dark honeys genuinely do measure higher in phenolic compounds and antioxidant capacity, and no clinical study has shown that this produces any benefit to a person eating them. All honey is about 80% sugar, the quantities involved are small, and the difference is a laboratory measurement rather than a health outcome.
Can you be allergic to honey?
True
Yes, though it is uncommon. Reactions are usually to pollen or bee proteins carried in the honey rather than to the sugars, and they range from mild oral itching to, rarely, anaphylaxis. Bee pollen and royal jelly cause severe reactions considerably more often than honey does.
Is honey good for your skin?
It depends
Honey has genuine humectant and antibacterial properties, and there is reasonable evidence for medical-grade honey in supervised wound care. Evidence for cosmetic use on healthy skin is thin, and kitchen honey should not go on broken skin because it is not sterile.
Is bee venom therapy proven?
False
No. Systematic review evidence does not support the conditions apitherapy is marketed for, adverse events are common, and anaphylaxis following bee venom therapy has caused deaths — including in people previously treated without incident.

Are all bees honey bees?
False
No, and it is not close. There are around 20,000 bee species worldwide and only about eight are honey bees. Roughly 90% are solitary — one female, one nest, no colony, no queen and no honey at all. Bumblebees make a few days' worth of stores in wax pots; stingless bees make a genuinely harvestable quantity. Everyone else makes none.
Do bumblebees make honey?
Mostly true
Yes, in the strict sense — bumblebees ripen nectar and store it in small wax pots — but only a few days' worth, and there is nothing to harvest. The reason is their life cycle: a bumblebee colony dies every autumn, leaving only mated queens to overwinter alone, so there is no group to feed through the winter and no reason to store for one.
Do bees die after stinging you?
It depends
Only honey bee workers, and only when they sting a mammal. Their sting is barbed and lodges in skin, tearing free from the bee, which then dies. The barbs do not catch in insect cuticle, so a honey bee fighting a wasp stings repeatedly and survives. Bumblebees and solitary bees have smooth stings and do not die. Male bees of every species cannot sting at all, and stingless bees have no functional sting.
How much honey does one bee make in its life?

About a twelfth of a teaspoon — roughly half a gram — over an entire foraging life of a few weeks. A 450 g jar therefore represents the complete lifetime output of somewhere around a thousand bees, and collectively something in the region of 80,000 kilometres of flying, which is about twice round the equator.
Are bees going extinct?
It depends
It depends entirely on which bees. Honey bees are a managed livestock species and their global colony numbers have risen, not fallen — they are not endangered. Many wild bees genuinely are declining, and some are threatened with extinction, driven by habitat loss, agricultural intensification and pesticides. The headline conflates the two.
How far do bees fly from their nest?
It depends
It depends enormously on the bee. A honey bee will fly over ten kilometres if she has to and usually forages within one to three. Most solitary bees range only a few hundred metres, and the smallest barely manage that. Foraging range scales with body size, consistently across the whole order.
How do bees choose which flowers to visit?
True
By colour, scent, pattern, shape and — decisively — by learning. Bees see ultraviolet and not red, follow nectar guides invisible to us, remember which species paid well, and largely stick to one species per trip. That last habit, flower constancy, is what makes them useful pollinators rather than merely nectar thieves.
How do bees survive winter?

Three completely different strategies. Honey bee colonies stay awake all winter as a shivering cluster, eating stored honey. Bumblebee colonies die entirely, and only mated new queens survive by hibernating alone underground. Solitary bees do not experience winter as adults at all — they overwinter sealed in a cell as larvae or dormant adults.
How do bees keep the hive at the right temperature?

A honey bee colony holds its brood nest at roughly 34-35 °C year-round, within about half a degree — tighter regulation than most mammals manage. It heats by shivering flight muscles and cools by fanning and by evaporating water it has deliberately collected. The colony thermoregulates; no individual bee does.
How many flowers does a bee visit?

Between about fifty and a thousand flowers on a single trip, and ten to fifteen trips a day — so somewhere in the low thousands daily. A 450 g jar of honey represents roughly two million flower visits and around 80,000 kilometres of flying, spread across the lifetimes of about a thousand bees.
How much honey does one hive produce in a year?
It depends
A strong colony in a good year produces roughly 20 to 60 kg of surplus in temperate climates, and the colony consumes a similar amount again itself. In a poor year the same hive may produce nothing and need feeding. The variable is forage and weather, not the bees.
Do bees make honey for humans?
False
No. Honey is winter food for the colony, and the reason honey bees make it in quantity is that they survive winter awake as a cluster rather than hibernating. Bumblebees, which die off each autumn, store only a few days' worth. Solitary bees store none at all, because there is no colony to feed.
Are honey bees pushing out wild bees?
Mostly true
In some landscapes, yes. Managed honey bee colonies are livestock kept at densities no wild bee reaches, they forage over several kilometres, and there is reasonable evidence they reduce forage available to wild bees and spread pathogens into wild populations. Adding hives is not conservation, and in flower-poor landscapes it can be actively harmful.
How do bees make wax?

Bees secrete it. Workers of about twelve to eighteen days old have eight wax glands on the underside of the abdomen that produce small transparent scales, which the bee then chews and moulds into comb. They do not collect it from anywhere — it is made from honey inside their own bodies.
What is bee bread?
True
Bee bread is pollen that has been packed into a cell, mixed with nectar and bee secretions, and left to ferment. Lactic acid bacteria acidify it, which preserves it and makes its protein more available — it is the colony's stored protein, and it is not the same thing as the bee pollen sold as a supplement.
What kind of bee is this?
It depends
Start with size and shape rather than colour. A honey bee is slim, amber-brown and about 12 mm; a bumblebee is round, furry and obviously larger; anything small, dark and fast is probably a solitary bee, of which there are hundreds of species. If it has a narrow waist, no fur and bright flat yellow, it is a wasp — and if it hovers and has one pair of wings and huge eyes, it is a hoverfly pretending.
Will a bee sting me?
Mostly false
Almost certainly not. Only females can sting, most solitary bees have a sting too weak to pierce human skin, and the whole group is defensive rather than aggressive — a bee away from its nest has nothing to defend and essentially never stings. The exceptions are a honey bee colony being disturbed and a bumblebee nest being interfered with. Nothing about a bee on a flower is a risk.
There's a bees' nest in my garden — what should I do?
Mostly false
In almost every case, nothing. A bumblebee nest dies out naturally by late summer and never returns to the same hole; holes in a lawn are solitary mining bees that will be gone in weeks and cannot meaningfully sting. A honey bee swarm hanging in a cluster should be reported to a local beekeeper, who will usually collect it free. Only a wasp nest close to a doorway is a case for control, and that is a different animal.
What is bee space?
True
The gap of roughly a centimetre that bees leave clear for movement. Anything narrower they seal with propolis; anything wider they build comb across. Every movable-frame hive is built around it.
What is migratory beekeeping?
True
Moving colonies to where they are needed — either to a honey flow the home apiary cannot reach, or to a crop whose grower is paying for pollination. The second reason now drives the largest operations.
How do beekeepers make money?
It depends
From several things, in proportions that differ completely between operations: honey, pollination contracts, queens and package bees, wax and other hive products. For many large operations pollination now earns more than honey.
What are Africanised honey bees?
True
Hybrids of an African subspecies brought to Brazil for a breeding programme in the 1950s with the European bees already there. Swarms escaped in 1957 and the population spread across South and Central America and into the southern United States.
Why are Africanised bees called killer bees?
Mostly false
The name comes from press coverage in the 1960s and 1970s. The danger is real but specific: the venom is no stronger, and what differs is how many bees respond to a disturbed colony and how far they pursue.
How did Varroa spread around the world?
True
It is a natural parasite of the Asian honey bee, on which it does comparatively little harm. It transferred to the western honey bee where beekeeping brought the two species together, then travelled the world with managed colonies.
What is urban beekeeping, and does it help bees?
It depends
Keeping hives on roofs, balconies and allotments. Urban colonies often do very well — and keeping honey bees is not a conservation measure, because they are managed livestock competing with wild bees for the same flowers.
What is colony collapse disorder, and is it still happening?
It depends
A specific syndrome named in the United States around 2006-07: adult bees vanishing from an otherwise healthy-looking colony, leaving brood, stores and a queen with almost no dead bees present. Reports matching that description declined; the term is now widely misused for colony losses generally.
What are neonicotinoids and do they harm bees?
It depends
A systemic insecticide class that moves through a plant into its nectar and pollen. Sublethal harm at realistic doses is well demonstrated in the laboratory; colony-level effects in real fields are genuinely mixed, and the clearest signals are often for wild bees rather than honey bees.
Can sensors and AI monitor hive health?
Mostly false
Partly, and much less than the marketing implies. Hive scales are mature and genuinely useful; acoustic, camera and AI methods are mostly proof-of-concept, and the systematic reviews of the field say so in those terms.
There is a swarm of bees on my property — what should I do?
It depends
First work out whether it is a swarm hanging in the open or an established nest inside a structure — they need completely different responses. A swarm is usually docile and often collected free by a local beekeeper; a nest in a wall is a building job. Do not spray either.
Is the Asian hornet established in the UK?
It depends
Partly, and the honest answer changed recently. As at August 2026, analyses of nests found in England between 2016 and 2024 indicate a limited established population, and spring 2025 queens were genetically identified as offspring of nests destroyed in 2024 — so the hornet is overwintering here rather than only arriving. The official programme to find and destroy nests continues. Neither 'not established' nor 'established across the UK' describes the position.
How dangerous are Asian hornets?
Mostly false
To a person going about their day, not very. The yellow-legged hornet is defensive rather than aggressive, its sting is painful and broadly comparable to other large stinging insects, and it does not seek people out. The real risks are the ordinary ones — venom allergy, and multiple stings from a disturbed nest. Most alarming hornet statistics in circulation describe a different and much larger species.
There are bees going into my wall — what are they and should I worry?
Mostly false
Usually nothing needs doing, and the building is usually fine. Most bees going into a wall are solitary bees using holes in mortar that had already gone soft — no colony, essentially no sting, and no meaningful damage. The two cases that need a decision are an established honey bee colony, which is a removal job rather than a spray job, and mortar that was failing anyway, which needs repointing at the right time of year.
How do bees carry pollen?
It depends
On the outside of the body, and the method varies by species. Honey bees and bumblebees comb pollen out of their branched hairs and pack it into a smooth basket on each hind leg — the bright lumps you can see. Most other bees have no basket at all: they carry loose pollen in dense brushes under the abdomen or on the legs, and a few swallow it. Nectar goes inside; pollen almost never does.

Can bees recognise human faces?
Mostly true
Honey bees can be trained to distinguish between images of human faces and to remember the distinction for days — a genuinely surprising result for an insect with about a million neurons. But they appear to do it by learning an arrangement of features rather than by recognising a person, and there is no good evidence that a bee knows its beekeeper.
Do bees sleep?
True
Yes, and it is genuine sleep rather than simple inactivity. Honey bees show a sustained immobile state with drooping antennae, reduced muscle tone and a raised response threshold, they sleep more after being kept awake, and depriving them of it measurably degrades their memory and their dance communication.
Why do bees dance?
True
To give directions. A returning honey bee forager performs a figure-of-eight run on the vertical comb in which the angle of the straight portion encodes the direction of the food relative to the sun, and its duration encodes the distance. Von Frisch called it a dance language, and the encoding is genuinely symbolic — a solar bearing represented as an angle from vertical on a dark comb. It has not been shown to be compositional or referential beyond that, which is what the word language usually implies.
How does a bee colony make decisions?

Nobody is in charge, including the queen. A swarm choosing a new home sends out hundreds of scouts, each advertising what she found by dancing, and support accumulates for better sites while advertising for poorer ones decays. The colony converges on one choice with no central decision-maker, and it usually picks the best available cavity.
Can bees see colour?
True
Yes, and differently from us. Bees see ultraviolet, blue and green and cannot see red as a colour — a red flower reads as dark unless it also reflects ultraviolet. Many flowers carry patterns visible only in ultraviolet that direct bees to the nectar.
Do individual bees have personalities?
Mostly true
Individual bees differ consistently in behaviour in ways that resemble what is called personality in other animals — some are reliably bolder, more exploratory or quicker to take on particular tasks. Whether that constitutes personality in any richer sense is a question about definitions rather than about the bees.
What bird leads humans to honey?
True
The greater honeyguide, Indicator indicator, a drab starling-sized bird found across much of sub-Saharan Africa. It locates wild bees' nests it cannot open, leads people to them with a distinctive call and a stop-start flight, and feeds on the wax and brood left behind after the nest is cut open.
