Fresh vs aged honey
Honey does not go off, and it does not stay the same either. It darkens, loses aroma and accumulates a compound that laboratories measure precisely because it records how a jar has been treated.
Which to choose
Fresh, for anything where aroma matters — which is most eating honey and all of the delicate monoflorals. Age is not a fault and there is nothing to throw away, but a honey is at its best in the first year or two and there is no case for cellaring it. Store cool, dark and sealed, and buy quantities you will actually finish.
Why these get compared
Honey's famous indefinite shelf life leads people to treat age as irrelevant, and it is not. A three-year-old jar is safe and is measurably a different product from the one that was bottled, in ways a laboratory can quantify and a taster can notice.

Where the difference is overstated
That old honey is spoiled or has 'gone to sugar'. Crystallisation is not spoilage and reverses with warming; darkening is not spoilage either. The only genuine spoilage route is fermentation, which needs moisture above about 20% and smells unmistakably of it.
