Which to choose
For flavour, and for value, heather. It is a more interesting honey than its price suggests and the cost reflects real production difficulty. Choose manuka if you want the specific taste, which is unlike anything else, or if you specifically want audited methylglyoxal content and understand that laboratory activity is not a demonstrated benefit from eating it. Buy the lowest audited rating that meets your actual purpose.

They share a genuinely unusual physical property that almost no other honey has, and they occupy the same premium shelf position for completely different reasons.

Where the difference is overstated
That manuka is medicinal and heather is merely food. Established medical honey use is topical wound care with sterilised regulated products, and no clinical evidence supports either honey doing anything when eaten. As foods they differ in flavour and price.
