High moisture vs low moisture honey
A few percentage points of water separate a honey that keeps indefinitely from one that ferments in the cupboard. It is the single most consequential number in honey, and it is invisible.
Which to choose
For a jar you will keep, low moisture. If you are offered honey that pours like syrup and tastes faintly sharp or yeasty, that is fermentation and the honey is spoiled. The exception is a named high-moisture honey such as ling heather, where the character is the point and the trade-off is understood — buy it, and eat it rather than storing it for years.
Why these get compared
Moisture is the property a buyer cannot see, cannot taste reliably and is almost never told. It decides shelf life, texture, sweetness and whether a honey is legally saleable at all — and it is the reason beekeepers own refractometers and worry about the weather.

Where the difference is overstated
That thickness measures quality. Viscosity is set by moisture, temperature and floral source together, and a cold jar of ordinary honey feels thicker than a warm jar of excellent honey. Nobody can read moisture by pouring.
