Honey syrup vs neat honey
One technique that makes honey usable in every cold drink there is, and the reason a spoonful in iced tea ends up as a lump at the bottom of the glass.
Which to choose
Anything cold gets a syrup: iced tea, iced coffee, lemonade, cocktails, cold brew. Anything hot takes honey neat, added once the drink has come off the boil. Make the syrup one-to-one for convenience or three-to-one honey to water if you want more character to survive the dilution, and keep it in the fridge.
Why these get compared
Every failure with honey in a cold drink has the same cause and the same fix, and almost no recipe explains it. Honey is a supersaturated sugar solution at around eighty per cent sugar and it will not disperse into anything cold.

Where the difference is overstated
The loss of quality. A syrup is honey and water, made without heat above about 50 °C, and it is not a degraded product. The real cost is that it goes off in a fortnight and neat honey never does.
