Honeydew honey vs floral honey

One of these does not come from flowers at all. Honeydew honey is made from the excretions of sap-feeding insects, and the resulting differences in chemistry, flavour and behaviour are large enough that regulators treat it as a separate category.

Which to choose

For a strongly flavoured, less sweet honey that works with cheese, yoghurt, dark bread and coffee, honeydew — forest honeydew from central Europe or pine honey from Greece and Turkey are the two to start with. For tea, baking, delicate pairings or anyone who wants honey to taste like honey, floral. If you have found ordinary honey too sweet to eat much of, honeydew is very likely the thing you were looking for.

Why these get compared

Because a shopper who buys forest honey or Greek pine honey expecting something like acacia will be surprised, and because the difference is a genuine category distinction rather than a matter of intensity. It is also the clearest available illustration that 'honey' describes a process the bees perform, not a specific raw material.

Where the difference is overstated

The health framing on honeydew's higher antioxidant content. It is real and it is measured in a dish; no clinical outcome follows from it. Also overstated: that honeydew honey is somehow lesser or a fault. It is a distinct and prized product across southern and central Europe.
