Which to choose
Ling heather if you want the famous one — the texture and the smoky floral character are genuinely distinctive and worth trying once. Bell heather for everyday use, for cooking and for cheese: it is richer, cheaper, more reliable and in some respects the better honey. Both are excellent on oatcakes.
