Liquid vs crystallised honey
Crystallisation is not spoilage, not adulteration and not a fault. It is what a honey's sugar ratio dictates, and the only real question is whether you prefer to pour or to spread.
Which to choose
For pouring, drizzling and hot drinks, buy a honey that stays liquid — acacia, sage, a honeydew. For toast and spreading, buy a set or creamed honey deliberately rather than fighting a jar that set on its own. If a jar has set and you want it liquid, stand it in warm water below 40 °C rather than microwaving it.
Why these get compared
A jar that has gone solid is the single most common reason people think their honey has gone off. It has not, and the belief is so widespread that producers heat honey specifically to prevent it.

Where the difference is overstated
That crystallisation indicates age, adulteration or poor quality. It indicates a glucose-rich sugar ratio and a cool cupboard, and nothing else. Storing honey in the fridge accelerates it, which is one reason not to.
