Storing honey: cupboard vs fridge
The fridge is the wrong place for honey, and the reason is specific: refrigeration temperatures are close to the optimum for crystallisation.
Which to choose
A cupboard at room temperature, sealed, away from sunlight and the cooker. If you want to keep a special honey for years without it setting, the freezer works and the fridge is the worst of both. If a jar has already set and you want it liquid, stand it in warm water below 40 °C.
Why these get compared
Refrigerating is the default instinct for anything sweet and perishable-looking, and honey is neither. The advice against it is nearly universal and the reason is rarely given.

Where the difference is overstated
The risk of leaving honey out. Sealed honey at room temperature is stable indefinitely. The realistic failure mode is a loose lid in a humid kitchen, which lets honey draw water from the air until the surface layer ferments.
