Sunflower vs rapeseed honey
The two great field-crop honeys of Europe. Both set fast and both are cheap, and one has considerably more to say than the other.
Which to choose
Rapeseed if you want a smooth spreadable set honey with no assertive character — it is the best base for creamed honey there is. Sunflower if you want something with a bit of personality at a commodity price, particularly for baking and savoury use. Both are excellent value and neither is a tasting honey.
Why these get compared
Both are commodity honeys that end up in blends, both are notorious for setting hard, and both are frequently the first monofloral a European buyer encounters without realising it.

Where the difference is overstated
That fast crystallisation indicates poor quality. Both set fast because their glucose share is high, which is a property of the nectar. A liquid jar of either late in the year has been warmed.
