Tupelo vs acacia honey
The two honeys that genuinely do not crystallise, from opposite sides of the Atlantic. Same chemistry, very different flavour, and a very different price.
Which to choose
Acacia for everyday use — it is a fraction of the price, does the same job in tea and on delicate food, and is far easier to find. Tupelo when you want to taste what a honey from one small landscape is like, and are prepared to pay for it. If the only thing you want is a jar that stays pourable, buy acacia and save the difference.
Why these get compared
Anyone looking for a honey that stays liquid arrives at one of these two. They reach that property by the same route — a very low glucose-to-fructose ratio — and are otherwise not much alike.

Where the difference is overstated
Both are sold with a suggestion that not crystallising indicates quality. It does not — it indicates a low glucose share, which is a compositional fact and neither good nor bad. Rapeseed honey sets in weeks and is not thereby inferior.
