Where substitution does not work
These are listed rather than silently converted. A calculator that happily produces a number for a meringue has given a confident wrong answer.
- Creamed butter-and-sugar sponges
- The aeration comes from sugar crystals cutting air into the butter. A liquid sweetener cannot do it, and the sponge will be denser.
- Meringue and Italian meringue
- Egg white foam structure depends on how sucrose behaves in it. Honey does not substitute cleanly.
- Caramel and anything needing a hard crack
- Honey's mixed sugars and water content behave differently at high temperature, and it burns before reaching the same stages.
- Crisp biscuits and shortbread
- Crispness comes from dryness. Honey's added water and its hygroscopy will soften them within a day.
- Preserving and jam setting
- Set depends on a specific sugar concentration interacting with pectin. Substituting changes both the concentration and the acidity.
What this cannot tell you
