How is honey tested for authenticity?
Short answerIt depends
Several methods, none of them complete. Carbon isotope analysis catches cane and maize syrups but misses rice and beet. NMR profiling compares a sample against a reference database and catches far more. Pollen analysis establishes floral and geographic origin. The adulterators adapt to each test as it becomes standard.

Why this is an arms race rather than a solved problem
Each test creates an incentive to defeat it. When isotope analysis became standard, syrups shifted towards C3 sources that it cannot see. Syrups have since been marketed explicitly as passing standard testing. EU coordinated control programmes have repeatedly found substantial proportions of imported samples suspicious, and the honeys most targeted are the expensive ones — acacia, manuka, sidr, tupelo — because that is where the margin is.
