Eating brood

In most harvesting traditions the larvae are food, and a nutritionally significant one. The modern picture of honey as a jar of clear liquid is a processing artefact; what a harvester carries home is comb containing honey, pollen, wax and brood.

Currently documented in South and Southeast Asian, Central African and Australian harvesting, and in commercial drone-brood harvesting in parts of Europe.

What is eaten and where

Bee brood — larvae and pupae — is eaten raw, roasted or cooked in comb across South and Southeast Asia, in Central African forest societies, in parts of Mesoamerica and in Australian sugarbag harvesting. It is high in fat and protein, which changes the nutritional picture substantially from sugar alone, and in several forager diets it is the more important half of the harvest.

In Europe the practice largely disappeared with the end of destructive harvesting, but it did not disappear entirely: drone brood is harvested commercially in parts of central and eastern Europe, mostly as a by-product of varroa control, and eaten or sold as a supplement.

How it is prepared

Comb containing brood is eaten raw straight from the harvest, roasted whole over a fire, or fried, and in several Asian cuisines drone brood appears in soups and salads as a named ingredient rather than as a by-product. Where honey and brood are eaten together the comb is simply chewed and the wax spat out.

Nutritional analyses put bee brood high in protein and fat with a useful micronutrient profile, which is why its dietary contribution in forager societies is substantial rather than incidental. It is also perishable, so it is eaten at the harvest rather than stored.

A note on terms

Brood covers eggs, larvae and pupae, and traditions distinguish between them: pupae are firmer and are the usual target, larvae are eaten in comb, and eggs are generally incidental. Drone brood is preferred where it is available because the cells are larger and the harvest is easier.

Cultural significance

In several forager societies brood is valued above honey, which inverts the assumption most readers arrive with.

What this page does not claim

That brood eating is universal in harvesting traditions, or that it is always valued equally. Some traditions discard brood, some prize it, and the variation is not explained by geography.
