The pairing with the deepest tradition and the widest gap between doing it well and doing it at all. Salt, fat and acid are what the honey is answering, and each wants a different answer.

Answer the cheese's dominant axis

Cheese varies along three axes that matter here: how salty, how fatty, and how acidic. Working out which one dominates tells you what the honey has to do, and that is a more reliable method than memorising pairs.

Why blue cheese and honey works

Blue cheese is salt and Penicillium. The mould produces methyl ketones — the peppery, faintly metallic bite — and the salt content is among the highest of any cheese, because salt is what controls the mould. Sweetness suppresses the perception of both salt and bitterness, which is the mechanism, and it is why sugar in any form improves blue cheese.

But a merely sweet honey gets swallowed. The useful ones are sweet AND structural: chestnut, buckwheat, the forest honeydews. Walnut bread underneath adds a third element, because walnut skin tannin is a bitterness of yet another kind.

The Sardinian case for bitter honey

Pecorino sardo with corbezzolo — strawberry tree — honey is a regional staple rather than a restaurant idea, and the honey in question is genuinely, deliberately bitter. That combination is the clearest argument on this site that bitterness in honey is a feature: against a salty aged sheep's cheese it stops the pairing collapsing into sweet-and-salty and gives it somewhere to go.

The texture question nobody mentions

A runny honey drizzled over cheese slides off and pools on the board; a set or thick honey stays where it is put. On a cheeseboard that is not a detail — it decides how much honey actually reaches the mouth with the cheese rather than after it. Where the honey you want is runny, put it in a small dish beside rather than over.
