Buckwheat
Not a wheat and not a grass, but a fast-growing relative of dock and rhubarb grown for its seed and, increasingly, as a cover crop. Buckwheat produces a strong and distinctive nectar flow in a narrow window each morning, and the honey it makes is the darkest and most polarising in wide European and North American production. It also has a useful habit for a bee plant: sown in June, it flowers within six weeks.

- Which bees, and why
- Worked heavily in the morning by honey bees, bumblebees and hoverflies, and largely abandoned by the afternoon. Buckwheat is self-incompatible and genuinely depends on insect pollination for seed set, so the relationship runs both ways here in a way it does not for oilseed rape.

- Genuinely useful as a late-summer gap filler, and its speed from sowing to flower makes it one of the few forage plants that can be deployed tactically within a single season.

Depends entirely on sowing date rather than on season — buckwheat flowers roughly five to six weeks after sowing, so a staggered sowing gives a staggered flow.
- When nectar flows
- Strongly diurnal and the clearest example of it in the catalogue: buckwheat secretes nectar mainly in the morning and shuts down by early afternoon, especially in hot weather. Beekeepers near buckwheat notice their bees stop working it around midday.
- Year-to-year variation
- Sensitive to heat and drought during flowering, which curtails the morning flow. Cool moist mornings are what produce a buckwheat crop.
What it does to the honey
Buckwheat nectar carries an unusually high load of phenolic compounds, which is what makes the honey dark, malty and barnyard-scented, and why it appears in antioxidant research far more often than its market share warrants. The molasses-and-malt character is the plant's chemistry arriving almost undiluted.

- Poor to moderate soil, full sun, warm weather. It performs badly on rich soil, which is one reason it is grown on marginal ground.

- Southwest China and the Himalayan foothills, domesticated there and carried west across Asia into Europe by the medieval period.

- Sow after the last frost and expect flowers in about six weeks. It is one of the quickest routes from bare soil to bee forage available.
- Widely used as a green manure and weed-suppressing cover crop, so the forage is often free — the plant was going in anyway.
- Frost-tender, so it dies off with the first hard frost and needs resowing each year.
What it looks like
A branching annual with reddish stems, arrow-shaped leaves and loose clusters of small white or pink-tinged flowers, followed by distinctive three-sided brown seeds.
