Buckwheat honey

Dark, malty and frankly divisive. Buckwheat honey tastes of molasses, malt and something distinctly barnyard — a note people either love or describe as a fault. It is one of the darkest honeys in wide production, and among the highest in phenolic compounds, which is why it appears in research on honey's antioxidant content far more often than its market share would suggest.

Floral source
Fagopyrum esculentum, a fast-growing pseudo-cereal in the dock family rather than a grass. It is not related to wheat.

The north-eastern United States and Canada, Poland, Ukraine, Russia, Belarus, Lithuania and China.

Buckwheat secretes nectar mainly in the morning and stops by early afternoon in warm weather, so foraging is concentrated into a few hours a day. Beekeepers describe the returning colony as noticeably pungent during the flow.

What to do with it

A cooking honey before it is a table honey. It stands up to heat, to soy, to vinegar and to smoke, and it is the right honey in gingerbread, in barbecue glazes and in dark rye baking. On plain toast it is a lot to ask of a morning.

  • Long used in Polish, Ukrainian and Russian domestic practice, often in hot drinks in winter.
  • A traditional ingredient in Appalachian and north-eastern American baking, where buckwheat was widely grown.

Emerging research

Real studies exist and point somewhere, but they are small, in vitro, in animals, or not yet replicated. Direction is not the same as a result.

Emerging research

Buckwheat honey contains markedly higher levels of phenolic compounds and antioxidant activity than pale floral honeys.

Consistently reported in laboratory comparisons of honey varieties: darker honeys, and buckwheat in particular, measure higher on standard antioxidant assays.

What this does not claim: Measuring higher antioxidant activity in a test tube is not the same as producing a health effect in a person. The quantity of honey anyone actually eats is small, and no clinical benefit follows from the assay result on its own.
