White clover
The plant behind more of the world's honey than any other, and it is growing in most lawns already. White clover is a low creeping perennial sown across temperate pasture at enormous scale for its nitrogen fixation, and the honey crop is a by-product of that agricultural decision. In a garden it costs nothing: stop mowing for three weeks and it flowers.

- Which bees, and why
- The shallow florets of white clover suit the honey bee's short tongue exactly, which is why it is a honey bee crop in a way its relative red clover is not.
The critical contrast on this site. Red clover (Trifolium pratense) has a corolla around 9-10 mm deep, beyond the reach of a honey bee's roughly 6 mm tongue, so its nectar goes almost entirely to long-tongued bumblebees. White clover's florets are short and open to everyone. Two closely related plants, two completely different pollinator communities — and the reason 'clover honey' means white clover.

A long season, and it will re-flower repeatedly after cutting, which is unusual and useful.
- When nectar flows
- Warm, humid conditions with adequate soil moisture produce the heaviest flow. Drought shuts it down quickly.

- Yield depends heavily on grazing and mowing regimes as much as on weather — a field cut for silage at the wrong week produces nothing at all.

Gives the mild, warm, faintly cinnamon-scented honey that most English-speaking readers think of as the default taste of honey.

- Mowing every week removes the flowers before they open. Cutting every four weeks, or leaving part of a lawn uncut between May and September, transforms its value at no cost.
- Already present in most lawns. The cheapest bee-friendly action available to anyone with grass is to mow less often.
- Fixes nitrogen, so it improves the soil it grows in and needs no feeding.
- Sow into existing turf by scarifying and broadcasting seed in spring or early autumn.
What it looks like
A low creeping perennial rooting at the nodes, with the familiar three-lobed leaves, often marked with a pale chevron, and rounded white or pink-tinged flower heads on short stalks.
