Definition

Nuclear magnetic resonance spectroscopy produces a profile of a honey's whole composition, which can be compared against reference databases of authentic honeys. It catches syrups that isotope testing misses and can flag geographic and floral misdescription. It depends entirely on the quality of the reference database behind it.
