Honey in desserts

How much of a honey survives a dessert depends almost entirely on how hot it got and for how long. Custards keep nearly everything; cakes keep almost nothing.

That ladder is the whole guide in one table. Where a dessert sits on it decides both which honey to use and how much of what you paid for will reach anybody's mouth.

Why honey ice cream scoops better

Fructose depresses the freezing point of a mixture more effectively than sucrose at the same weight, so a honey-sweetened ice cream stays softer at freezer temperature. That is a genuine textural advantage rather than a flavour claim, and it is the reason to use honey in a frozen dessert beyond taste.

Cold also suppresses aroma perception considerably, so a delicate honey frozen into a base is lost twice over — once to the dilution and once to the temperature. Use an assertive honey inside, or drizzle a fine one over the top where it stays at room temperature against cold cream.

Substituting honey for sugar in a bake

Four things change at once and each has a consequence. Honey is roughly a quarter sweeter than sucrose by weight, so less is needed. It is seventeen to twenty per cent water, so other liquid comes down. It is acidic, which reacts with bicarbonate of soda. And its fructose browns early, so the oven comes down.

  1. Use about 75 g of honey per 100 g of sugarHoney is sweeter by weight, so a one-for-one swap oversweetens.
  2. Reduce other liquid by about a fifth of the honey's weightHoney brings its own water, and a batter that ignores this comes out slack.
  3. Add bicarbonate if there is no other acidRoughly a quarter teaspoon per 100 g of honey. Too much leaves a soapy taste; none at all leaves a flat crumb.
  4. Drop the oven by 15 °C and check earlyHoney cakes brown faster and can be dark outside before the middle is set.

What honey gives back

Keeping quality. Honey is hygroscopic — it pulls water from the air and holds it — so honey cakes and biscuits stay soft for days longer than their sugar equivalents. That is why honey persisted in traditional baking across Europe and the Middle East long after sugar became cheap, and it is a functional advantage rather than a nostalgic one.
