Does freezing ruin honey?

No. Honey does not freeze solid at domestic freezer temperatures — it becomes very thick and glassy — and freezing is actually the best way to preserve its aroma and prevent crystallisation, because crystals form fastest around 14 °C and barely at all below about -18 °C. It is simply unnecessary for a food that keeps indefinitely anyway.
Where the belief comes from
From the general and usually sound intuition that freezing damages delicate foods by forming ice crystals that rupture cell walls. Honey has no cells and very little free water, so the mechanism that damages fruit and vegetables does not apply to it at all.
What actually happens
Honey is a supersaturated sugar solution with a water content of 15-20%, almost all of it bound to sugar rather than free. Its glass transition point is well below domestic freezer temperature, so it does not form ice — it becomes extremely viscous and eventually glassy, and returns to normal on warming with no change to its composition.
More usefully, freezing suspends the two processes that do degrade honey over time. Crystallisation is fastest around 14 °C and essentially stops below about -18 °C, and the slow chemical changes that darken honey and raise hydroxymethylfurfural also stop. Beekeepers and honey judges use freezing deliberately for exactly this reason.
When it is genuinely useful
- Comb honey, which is frozen as standard practice — it kills wax moth eggs and larvae without heat, and preserves the comb intact.
- A honey you want to keep liquid and unchanged for a long time, such as a competition sample or a rare monofloral.
- Large quantities in bulk before bottling.
The honest answer
Freezing is harmless and slightly beneficial, and almost nobody needs to do it. Honey stored sealed in a cupboard at room temperature keeps indefinitely. The only storage decision that really matters is keeping the lid on: honey pulls water out of the air, and above roughly 20% moisture the yeasts naturally present in it will ferment. That is the real failure mode, and a freezer is a considerably more elaborate solution to it than a tight lid.
