Honey storage guide
What has actually happened to a jar that has gone solid, cloudy, streaky or frothy — and which of those means the honey is genuinely spoiled.
Nothing wrong
Store it sealed, at room temperature, in the dark.
Honey's own chemistry does the preserving — low water activity, acidity, osmotic pressure and slow hydrogen peroxide generation — so it needs no refrigeration and no special handling. The one thing it genuinely needs protecting from is moisture, because every one of those defences depends on staying concentrated.
What to do about it
- Keep the lid on tight. This is the single most important thing.
- Use a dry spoon. A wet one adds both water and microorganisms.
- Room temperature in a cupboard, ideally 18-24 °C. Not the fridge — around 4 °C sits close to the range where crystallisation is fastest.
- Away from direct sun and the hob. Warmth and light degrade aroma and darken the colour.
What Acacia honey is expected to do
Very slow — often still liquid after a year or more — Often still liquid after a year or more. Some jars never set at all.
Its typical glucose-to-fructose ratio is 0.6. Glucose is the sugar that comes out of solution first, so a lower ratio means a honey that stays liquid longer — this is the number behind the behaviour, not a separate fact about it.
Acacia is the most fructose-dominant common honey, with a glucose-to-fructose ratio near 0.6 against roughly 1.0 for clover. Glucose is the sugar that comes out of solution first, and there is comparatively little of it here, so the honey can sit liquid for a year or more. This is a compositional fact, not a sign of processing — and it is exactly why acacia is the honey most often used as a base for adulteration with syrup, since a fake that stays liquid raises no suspicion.
Two things worth knowing whatever the jar has done
Do not refrigerate. Crystallisation is fastest at around 14 °C and a domestic fridge runs near 4 °C — much closer to that range than a kitchen cupboard, so the fridge accelerates the one thing most people are trying to avoid.
Warming honey to reverse crystallisation is not free. Above about 40 °C aroma volatiles are driven off and enzymes denature; above about 60 °C hydroxymethylfurfural rises measurably, which is the marker used to detect overheated honey. Gentle and once is fine. Hot and repeatedly turns a good honey into expensive syrup.
If you simply want a honey that stays liquid
These 34 honeys in the catalogue are recorded as very slow to crystallise. That is nectar chemistry rather than processing — they are fructose-dominant, and there is comparatively little glucose available to come out of solution.

- It cannot assess a specific jar. Anything with an off smell, visible mould or active fermentation needs a person to look at it.
- Crystallisation figures describe a honey TYPE. Any individual jar can behave differently depending on how it was handled, stored and filtered.
- Reversing crystallisation with heat degrades aroma and raises HMF. The tool says so rather than treating it as free.
- It assumes the jar contains what the label says. Adulterated honey behaves unpredictably and no storage advice covers it.
