Why does honey burn when I cook with it?

Because roughly forty per cent of honey is fructose, and fructose caramelises from about 110 °C against roughly 160 °C for table sugar. In a 200 °C oven a honey glaze passes that point within minutes, which is why it blackens long before the food underneath is cooked. Glaze in the last ten to fifteen minutes rather than at the start.
The temperature gap is large
Caramelisation is the thermal breakdown of sugars, and different sugars start at different temperatures. Fructose is the lowest of the common ones. Honey is a fructose-dominant sugar mixture, which is why honey-glazed food browns beautifully at temperatures where sugar-glazed food is still pale — and why it goes past beautiful into carbonised so quickly.

What to do about it
- Glaze at the end. The last ten to fifteen minutes of a roast, or the last two minutes under a grill, watching it the whole time.
- Thin the honey with an acid or a liquid — vinegar, citrus, soy — so it brushes evenly rather than pooling where it burns first.
- Two thin coats rather than one thick one.
- In baking, drop the oven by about 15 °C when substituting honey for sugar, and check for browning early.
- Scrape excess marinade off before cooking. A honey marinade left on the surface is a glaze applied at the worst possible moment.
