Definition
A honey that has not been blended across crops, regions or years. It varies from season to season, sometimes dramatically, and it can be traced by pollen analysis. Single-origin is a description of sourcing rather than a quality grade, and the premium buys specificity and traceability rather than a guaranteed better taste.
