Geography and honey chemistry
Honey has a terroir argument attached to it, and part of it is true. Place does reach the jar — but almost entirely through which plants grow there, not through the soil itself.
Three routes from place to jar
- Flora — much the strongestA hive in Provence makes lavender honey because lavender grows there. Almost everything people attribute to French terroir in honey is this: the plant list of a landscape, filtered through what happens to be flowering in a two to three kilometre radius during the flow.
- Climate — direct and measurableHumidity decides how hard a colony has to work to dry nectar, and therefore the moisture of the finished honey. Heat and drought stress determine whether honeydew is available at all, which moves conductivity and colour sharply. Tropical honeys run wetter than temperate ones for straightforward physical reasons.
- Soil — real but faintMineral uptake by the plant does carry through to the honey's ash content and to its trace element profile. The effect is genuine and is used analytically. It is also much smaller than the difference between two floral sources on the same soil.
Where geography is measurable
Geographic origin can be tested, and the techniques do not rely on flavour. Stable isotope ratios of hydrogen and oxygen track local rainfall; strontium and lead isotope ratios track underlying geology; trace element patterns reflect soil and industry; and pollen assemblages record the plants of a region rather than only the target species.
- Pollen analysis places a honey in a floristic region, and can rule out claimed origins outright when the assemblage is wrong.
- Stable isotope ratios provide a climatic and hydrological signature that is difficult to fake and difficult to interpret without a reference set.
- Trace element profiling works well when there is a database of authentic samples to compare against, and poorly when there is not.
Why altitude and latitude show up
High-altitude and high-latitude honeys tend to share characteristics — a short intense flow, often a narrow floral base, lower moisture in dry mountain air, and frequently a paler colour. None of that is caused by altitude directly. It is caused by what grows at altitude, how long it flowers, and how dry the air is while the bees are working.
