Honey from the other honey bees
Apis mellifera is one of roughly eight honey bees. The other seven make honey too — hunted from cliff faces, cut from open combs in forest canopy, or kept in log hives across Asia — and most of it never reaches a Western shelf.
Eight bees, two industries
Almost everything written about honey describes the product of one species. Apis mellifera is native to Europe, Africa and western Asia, and it is the only honey bee that took to the movable-frame hive well enough to be industrialised. The rest of the genus is Asian, and its honey moves through completely different systems — village log hives, seasonal honey hunts, forest concessions and local markets rather than bulk export.

The comb decides the harvest, and the harvest decides the honey
A cavity-nesting bee builds several parallel combs in a dark enclosed space, which is what makes a frame hive possible: the beekeeper can lift out honey comb without touching brood, and can extract by spinning rather than crushing. Everything that Western honey standards assume — clean separation, low moisture, consistent batches — follows from that.
An open-nesting bee builds one comb in the air. There is no way to take part of it without disturbing the whole colony, and no way to reach it without a climb. Honey hunters cut the honey band from the top of the comb, and what comes down the cliff is comb, brood fragments, pollen and honey together, usually squeezed by hand. The result is wetter and more variable than hive honey, and often ferments — which is why much of it is consumed or traded quickly rather than stored.
Where the honey genuinely differs
- Moisture is usually higher, mostly because open combs are harvested before capping is complete and because tropical humidity works against dehydration.
- Flora is forest flora — tualang, mangrove, wild coffee, rhododendron — and much of it is unavailable to managed European bees.
- Batches are seasonal and small. A single Apis dorsata comb might yield a few kilograms, harvested once a year when the colony returns.
- Adulteration risk is higher in the trade, not because the honey is worse but because scarcity and price attract it, and no traceability system covers a wild harvest.
The bee's own biology matters less here than the nest does. Apis species share the same enzymes and the same basic honey-making process, so their honey sits in the same broad chemical range. That is exactly the contrast with stingless bees, where the chemistry itself changes.
