How honey is made

Nectar is mostly water. Honey is mostly sugar. Everything interesting about honey happens in the gap between those two sentences.

Honey is not concentrated nectar

The common description — bees collect nectar and dry it out — is about half right, and the missing half is the part that makes honey a different substance rather than a reduced one. Two things happen on the way from flower to comb: water is removed, and the sugars are chemically changed. Only the first is evaporation.

Nectar arrives as a dilute solution, typically somewhere between 5% and 50% sugar depending on the plant and the weather, and dominated by sucrose — ordinary table sugar. Finished honey is around 80% sugar and contains very little sucrose at all. Most of it has been split into glucose and fructose, and that split is enzymatic work done by the bees.

The process, step by step

  1. CollectionA forager draws nectar up through her proboscis into the honey stomach — a storage crop, separate from her own digestive stomach. She may visit over a thousand flowers on one trip and will work a single species per trip, which is the flower constancy that makes honey bees useful pollinators.
  2. Enzyme addition begins in flightGlandular secretions are added to the nectar in the crop. The key one is invertase, which begins splitting sucrose into glucose and fructose. Glucose oxidase is added too, and it will matter later: it slowly generates hydrogen peroxide and gluconic acid, which is where honey's acidity and part of its antibacterial character come from.
  3. Transfer between beesBack at the nest the forager passes her load to a house bee, who may pass it on again. Each transfer adds more enzyme and exposes more surface area. This is not simply handing over a package — a substantial part of the ripening happens during these exchanges, with a bee holding a droplet between her mouthparts and working it in the warm nest air.
  4. EvaporationThe nectar is deposited in cells, often spread thinly at first, and the colony fans to move air through the nest. The nest is already warm — around 35 °C where brood is being raised — so the combination of heat and airflow drives the water off. It is a genuinely large task: a colony may handle several kilograms of nectar to produce one kilogram of honey.
  5. CappingWhen the water content falls to roughly 17-20%, the bees seal the cell with a wax capping. Capping is the colony's own judgement that the honey is finished and will not ferment, and it is why beekeepers use it as the signal that a frame is ready. Honey extracted before capping can have too much water in it and spoil.

What the bees have actually achieved

The finished product is a supersaturated sugar solution with almost no free water, an acidic pH of around 3.5 to 4.5, and a slow internal generation of hydrogen peroxide. Each of those is hostile to microbial life, and together they make honey close to indefinitely stable — which is the point. The colony has converted a perishable resource that is available for three months into a stable one that will still be food in February.

Honeydew: the exception that proves the definition

Some honey never involves a flower. Aphids and scale insects feeding on tree sap take in far more sugar than they can use and excrete the surplus onto leaves and needles. Bees collect it and ripen it exactly as they ripen nectar, and the result is honeydew honey — darker, more mineral, higher in pH and containing complex sugars that nectar honeys lack.

It is honey by every definition that matters, because the definitions describe the bee's work rather than the raw material. It is also a useful corrective to the assumption that honey and pollination are the same story: a colony working forest honeydew is producing honey and pollinating nothing at all.
