Honey's indefinite keeping quality does not extend automatically to infused honey containing fresh or wet ingredients.
Honey resists microbial growth through low water activity. Ingredients that are largely water raise water activity locally, at the interface with the honey, which is sufficient for osmotolerant yeasts already present to become active. Dried-ingredient infusions do not raise this and behave like the base honey.
What this does not claim: This is not a claim that any particular infused honey is unsafe, and it does not quantify how long any preparation keeps. It also does not say that fermentation makes a jar hazardous — it says the assumption of indefinite keeping is unfounded once water is introduced.
