Hot honey and infused honey

Hot honey is not a kind of honey. It is honey with chilli in it — a prepared food, made after the bees have finished, and one that behaves differently enough from plain honey that the usual reassurances about keeping do not all carry over.

The distinction that has to come first

Acacia honey, chestnut honey and pine honeydew honey are different because the bees worked different sources. Hot honey is different because a person added chilli. Those are not the same kind of difference, and collapsing them is the commonest confusion in this whole subject — it puts a condiment on the same shelf as a botanical origin and leaves a reader thinking there is a chilli plant somewhere that bees forage.

This site keeps them apart structurally. The honey catalogue holds honeys defined by forage, place and processing, and has no field in which an added ingredient could be recorded. Everything with something added lives here instead, and the practical consequence for a reader is that the two groups answer different questions: a honey record tells you what a season in one landscape tasted like, and a prepared honey tells you what somebody decided to do with it.

What hot honey is made from

Two ingredients do the work: a runny honey and a chilli. Most commercial versions add an acid — usually vinegar — and some add salt. That is the whole composition, and the proportions matter less than the choice of base, because the honey is the majority of what is in the jar and the chilli is a seasoning of it.

The base honey has two jobs and they pull in the same direction. It has to be assertive enough not to disappear under the chilli, and it has to stay pourable cold, because hot honey is used as a drizzle straight from the cupboard rather than warmed. That points at moderate to strong runny honeys and away from two groups: fine floral honeys, whose aromatics are simply lost under capsaicin, and set or rapidly granulating honeys, which cannot be drizzled.

How the heat gets into the honey

Capsaicin is the compound responsible for chilli heat, and it is poorly soluble in water and readily soluble in fat and alcohol. Honey is neither: it is a supersaturated sugar solution with very little free water and no fat at all. So the extraction that makes hot honey is working against the chemistry rather than with it, which explains almost everything about how the product is actually made.

  • It is slow. Contact time does more than anything else, which is why infusions are left to stand for a day or more rather than stirred and used.
  • It is uneven. Two jars made the same way can differ noticeably in heat, and commercial producers standardise with measured extracts rather than by hoping.
  • Gentle warmth helps and boiling does not. Warming lowers viscosity so the honey can actually reach the chilli surfaces; taking it hot enough to damage the honey also draws bitterness out of the seeds and pith.
  • Grinding or flaking the chilli increases surface area and therefore rate, at the cost of a product that has to be strained or stays cloudy.

Commercial production works differently from a domestic infusion in one respect that matters for the label. At scale, the heat usually comes from a standardised chilli extract or oleoresin rather than from steeping whole chillies, because a food business needs the tenth batch to match the first. That is a formulation decision rather than an adulteration, and it is the reason a commercial hot honey is consistent in a way a homemade one is not.

What it tastes like, and what it is for

Sweet first, then a burn that arrives late and builds. Capsaicin acts on a heat receptor rather than on a taste receptor, so the sensation is delayed relative to the sweetness and lasts longer than it — which is why hot honey reads as having a long finish even when the base honey does not. A vinegar-finished version tastes brighter and less cloying; a version without acid tastes rounder and can be heavy.

Its uses are the ones where sweetness was already welcome next to salt, fat or char. Fried chicken and pizza are the two dishes the category grew up on, and both are the same idea: a salty, fatty, browned surface that sugar flatters. Beyond them it goes on halloumi and other grilled cheeses, on roasted vegetables — squash, sprouts, carrots — on cornbread, on fresh cheeses such as ricotta and burrata, and into glazes for pork and chicken where the sugar does the browning.

Is it still honey?

Not in the sense the word carries in food law. The compositional standards — Codex internationally, and the honey directives and their national implementations in Europe and the UK — define honey as the natural sweet substance produced by bees, and they are explicit that nothing may be added to it and nothing characteristic removed from it. A honey with chilli in it therefore cannot be sold as 'honey'; it is a honey-based preparation, and the labelling has to say what is in it.

In ordinary speech it plainly is honey, and there is nothing wrong with calling it that. The distinction is worth knowing for two practical reasons. It tells you that a jar labelled hot honey is not making — and is not allowed to make — the compositional promises a jar of honey makes. And it explains why the percentage of honey in the jar can vary between brands without anything being wrong: the product is a recipe rather than a defined substance.

How it behaves in the jar

Crystallisation is a property of the base honey and the additions barely change it. What decides whether a honey granulates is its glucose-to-fructose ratio, plus the presence of particles for crystals to start on. Chilli flakes and pepper fragments are exactly such particles, so an unstrained infusion can set slightly sooner than the same honey plain — but a hot honey made from a fructose-dominant base will still stay liquid for a long time, and one made from a glucose-rich base will still set. The chilli is not the variable.

  • Store it as you would the base honey: cool, dry, tightly closed, out of the fridge. Refrigeration accelerates granulation rather than preserving anything.
  • If it sets, warm the jar gently in a water bath. The dissolved capsaicin is unaffected by the temperatures used to reverse crystallisation.
  • Expect some separation or settling in an unstrained jar. Solids drifting down is gravity, not spoilage.
  • A commercially made, strained, shelf-stable hot honey keeps like a preserve rather than like a honey — follow the date on the jar rather than the folklore about honey lasting forever.

Dried, fresh, and the difference between them

Almost every reliable infusion uses dried material. Dried chilli, dried herbs, whole spices and citrus zest that has been dried all bring flavour compounds without bringing much water, so the honey's protective concentration survives. Fresh chillies, fresh herbs, garlic cloves, ginger and fruit bring a great deal of water, and that is the whole distinction — not that fresh ingredients are dirtier, but that they are wet.

Garlic honey, and why this site will not give it a shelf life

Garlic held in honey is popular, widely written up, and the one preparation in this family where the sensible answer is a boundary rather than a method. Three things coincide in the jar. Garlic is a low-acid food. It is mostly water, so the honey immediately in contact with it is diluted. And a sealed jar of honey is close to oxygen-free. Those are the conditions under which Clostridium botulinum spores — which are common in soil and therefore on root vegetables — can become active and produce toxin.

Honey's own defence does not cover this. The low water activity that makes honey inhospitable is an average property of the honey, and the interface between a wet clove and the surrounding syrup is exactly where the average stops describing the local conditions. Honey's pH is also not a reliable acid barrier: it varies widely between honeys, and the acidification that makes preserved garlic safe in other contexts is a controlled step with a target, not something that happens by itself.

The related warning about honey and infants stands entirely separately and is not affected by any of this. Honey is not given to children under twelve months because it can carry C. botulinum spores that an infant gut cannot yet suppress, and that applies to plain honey, to infused honey and to anything made with either.

Where the category came from

Chilli steeped in honey is an old domestic idea in several places where both are ordinary ingredients, and southern Italy is the one most often named for it. What is recent is hot honey as a product category — a jar with a name on it, in supermarkets, on menus, in a decade.

The commercial chronology is unusually well documented. The chilli-honey that started the American category was encountered at a pizzeria in Brazil in 2004, made domestically for years afterwards, and put on the menu of a pizzeria in Brooklyn in 2010, drizzled over a soppressata pizza. The packaged product followed from the restaurant, rather than the other way round, and the sweet-heat menu trend followed from both.

The compositional standards define honey as the substance produced by bees from nectar or honeydew, and provide that no food ingredient may be added to it and nothing characteristic removed. A chilli-infused product is therefore a honey-based preparation whose label must reflect what it contains, rather than honey within the meaning of the instruments.

Honey's keeping quality does not automatically extend to honey that fresh, wet or low-acid ingredients have been added to.

Honey resists microbial growth because its water activity is too low to support it. Adding material that is largely water raises water activity at the interface between the addition and the honey, and food-safety guidance treats garlic in honey — low-acid, wet and in a near-anaerobic jar — as a preparation with no validated domestic process behind it.

What this does not claim: This does not establish that any particular jar is unsafe, does not quantify a risk, and is not a claim that infused honeys generally are hazardous — dried-ingredient infusions raise none of it. It also does not describe how to make any of these preparations safe, because no validated domestic process is available to describe.
