Does putting honey in hot tea ruin it?

It damages the flavour, which is the real loss. Boiling water drives off aroma compounds and degrades enzymes, so an expensive honey in a boiling drink is largely wasted. It does not make honey toxic — that claim comes from Ayurvedic tradition and is not supported by evidence. Let a drink cool for a minute before stirring honey in.
Where the belief comes from
Two separate sources merged. The flavour point is straightforwardly true and known to anyone who has compared the two. The toxicity claim comes from Ayurvedic texts holding that heated honey produces ama, a harmful residue, and is sometimes supported in modern retellings by pointing at hydroxymethylfurfural — which does rise with heating, and which is present in far higher quantities in many ordinary foods without concern.
What heat actually does
- Volatile aroma compounds are driven off. This is the largest and most noticeable effect, and it is why lavender or orange blossom honey in boiling water is money poorly spent.
- Enzymes denature. Diastase, invertase and glucose oxidase degrade with heat — measurable, and the basis of the diastase limits in honey standards. Whether it matters nutritionally is a different question, since these are proteins and would be digested regardless.
- Hydroxymethylfurfural rises. HMF forms from fructose under heat and acidity, and it is used as an indicator of heating and age.
On the toxicity claim
In practice
Let the drink stand for a minute, or stir the honey into a small amount of warm liquid first. Use a cheap honey if the drink is going to be very hot. And for a sore throat, the soothing effect is mechanical — a thick sweet liquid coating the throat — so a warm drink works as well as a boiling one and is easier to swallow.
