No. Honey is stable for a very long time and it does not improve — it slowly loses aroma, darkens, and accumulates hydroxymethylfurfural. A jar five years old is safe to eat and will taste of measurably less than it did when fresh.

Where the belief comes from

Two things feed the belief. The first is honey's genuine and remarkable stability, which gets compressed into the idea that honey improves rather than merely endures. The second is an analogy with wine, cheese and whisky, where controlled ageing is a real process producing real changes. Honey is not fermenting, maturing or developing; it is simply sitting there, slowly getting duller.

What actually changes with time

  • Aroma falls. The volatile compounds that carry a honey's character are lost steadily, and a floral honey shows this first and most.
  • Colour darkens. This is a Maillard-type browning and it accelerates with warmth.
  • HMF rises. Hydroxymethylfurfural forms slowly from fructose in acidic conditions, and it is the standard marker for age and heat exposure.
  • Diastase activity falls. Enzyme activity declines with time and with heat.
  • Crystallisation proceeds. Most honeys set eventually, which is neither improvement nor decline.

What does not change

Safety. Sealed honey kept dry and at room temperature does not become unsafe with age. The sugar concentration, low water activity and acidity that make it stable do not degrade.

Sugar composition. The glucose and fructose are not going anywhere. An old honey is as sweet and as caloric as a new one.

What to do instead

  • Buy honey in quantities you will finish within a year, particularly aromatic ones.
  • Keep it sealed, at room temperature, out of sunlight.
  • Do not refrigerate — it accelerates crystallisation without improving anything.
  • Do not repeatedly reheat a set jar. Each warming costs aroma.
  • Treat a best-before date as a quality indication, which is exactly what it is.
