Fermented pot honey
Stingless bee honey ferments readily because it is wetter than Apis honey, and several traditions treat that as the point rather than as spoilage — deliberately aged, soured and drunk.

Why it ferments
Meliponine honey typically carries substantially more water than Apis honey, and it is stored in sealed resin pots rather than in capped comb. Yeasts present in the nest work on it, and the result over time is more acidic, lower in sugar and mildly alcoholic. In Apis honey that sequence is a defect; here it is a normal property of the product.
Where it is deliberate
Documented practice in parts of the Neotropics includes ageing pot honey specifically for the soured product, and using it in preparations where the acidity is wanted. Balché ferments meliponine honey outright. Elsewhere the fermentation is simply accepted rather than sought, and consumers who expect Apis honey mistake it for spoilage.
What fermentation does to the honey
Sugars are consumed, acidity rises, and small quantities of alcohol and organic acids accumulate. The result is less sweet, sharper and more complex than fresh pot honey, and it becomes progressively less stable rather than more. Left long enough in a warm place it spoils by any standard, including that of the traditions that value the intermediate stage.
It also complicates every compositional test. A honey whose sugar profile and acidity change over weeks in the jar cannot be assessed against a fixed specification the way a stable Apis honey can, which is part of why writing standards for meliponine honey has proved difficult.
What this page does not claim
That all stingless bee honey is fermented, or that fermentation is always deliberate. It is a property of the product that some traditions cultivate, some tolerate and the commercial sector engineers out.
