Why honey tastes sweeter than sugar

Honey is about 80 per cent sugar and table sugar is 100 per cent sugar, yet honey tastes sweeter spoon for spoon. The reason is fructose, and it explains several kitchen results that otherwise look like folklore.

The fructose effect

On the usual relative scale where sucrose is 1.0, fructose is commonly placed at roughly 1.2 to 1.7 and glucose at around 0.7. Honey is typically 38 to 42 per cent fructose against 31 to 35 per cent glucose, so the sweeter of the two dominates. The result is that honey, despite being a fifth water, lands at about the same perceived sweetness as sugar or slightly above it.

Two things that are not sugar at all

Perceived sweetness is not a measurement of sugar. Honey is acidic — typically pH 3.4 to 4.5 — and acidity provides a contrast that makes sweetness read as brighter rather than flat. Aroma does something similar: a honey carrying floral or fruity volatiles is consistently described as sweeter than a neutral honey with the same sugar profile, because the brain assembles the impression from everything arriving at once.

Temperature changes the answer

Fructose exists in solution as a mixture of forms, and the proportion shifts with temperature in a direction that reduces sweetness as it warms. The practical consequence is that honey's sweetness advantage is largest in cold applications — iced tea, yoghurt, dressings — and smallest in hot ones. A honey that seems perfectly balanced on cold yoghurt can taste thin in a hot drink.

  • In baking, the usual substitution is to use around 20 to 25 per cent less honey than sugar by weight, and to reduce the other liquid.
  • Honey browns faster than sugar because fructose caramelises at a lower temperature and because there are amino acids present for the Maillard reaction.
  • Honey is hygroscopic, so baked goods made with it stay moist longer — a genuine advantage unrelated to sweetness.
