Chestnut honey
Aromatic, woody and unmistakably bitter — sweetness first, tannin second, and a long dry finish.

The great bitter honey of southern Europe, and the clearest demonstration that bitterness in honey can be a feature. Chestnut honey is dark amber, thick and aromatic, with a tannic, woody bitterness that arrives after the sweetness and stays. It is also chemically unusual: high in minerals, high in pollen, high in conductivity, and slow to crystallise despite its darkness.

Fructose-dominant, with a glucose-to-fructose ratio around 0.7, so it resists granulation for many months despite being a dark honey — a useful reminder that colour predicts crystallisation badly and sugar ratio predicts it well.

- Chestnut flowers are strongly and unpleasantly scented to most people and irresistible to bees. The flow is reliable in mature chestnut woodland, which has made it a foundation crop for beekeepers in the chestnut belts of Italy and France.

What to do with it
A cheese honey above all, and an excellent foil to fatty meat. Its bitterness makes it the wrong honey for tea and the right honey for anything rich enough to need cutting through. Italian practice pairs it with pecorino and with boiled meats.

History and traditional use
Sweet chestnut supported entire mountain economies in southern Europe — flour, timber, fodder and honey from the same tree. The honey is a by-product of a landscape that was planted for food security, and chestnut honey production has declined alongside the woodlands themselves.
