Types of honey: how the catalogue actually divides
Honey is sorted four different ways at once — by floral source, by colour, by texture and by processing — and a jar label usually mixes them. Knowing which axis a word belongs to is most of what it takes to read one.
Four axes, not one list
Almost every confusing honey label comes from the same source: four independent classification systems are in use simultaneously, and a jar can carry a word from each without contradiction. 'Raw organic creamed acacia honey' names a processing state, a farming standard, a texture and a floral source, and none of those tells you anything about the other three. Sorting the vocabulary by axis makes the whole shelf legible.

Monofloral, multifloral and honeydew
The primary division is what the bees were working. A monofloral honey comes predominantly from one plant — acacia, lavender, manuka, chestnut — and is named for it. Predominantly is doing real work in that sentence: bees cannot be confined to one species, so a monofloral honey is a matter of degree, not purity, and the thresholds that define it differ by country and by honey. Some are pollen percentages, some are conductivity or sensory panels, and for several well-known types no legal threshold exists at all.
A multifloral or wildflower honey comes from whatever was flowering, and it is not a lesser product. It is simply a different one: it varies by place and by season in a way a monofloral does not, and a good multifloral from a rich landscape is more interesting than a mediocre monofloral from a monoculture.
Colour, and what it does and does not predict
Honey is graded for colour on the Pfund scale, running from water white through the ambers to dark amber and beyond. Colour is the first thing anyone notices and it is a genuinely useful signal, because it correlates loosely with intensity: pale honeys tend towards mild and dark ones towards strong. Loosely is the operative word. Ivy honey is pale and assertively bitter; jarrah is very dark and tastes of caramel rather than of anything medicinal.
Colour also tracks mineral and phenolic content, which is why dark honeys dominate antioxidant research. That is a compositional fact about the honey and not, on its own, a health claim about the person eating it.
Texture: set honey is not spoiled honey
The single most common misreading on this axis is that a set jar has gone off. It has not. Crystallisation is glucose coming out of solution, and how fast it happens is determined mainly by the glucose-to-fructose ratio the nectar delivered. Acacia and tupelo are so fructose-dominant that they can sit liquid for a year or more; rapeseed, ivy and dandelion are so glucose-rich they can set in the comb before the beekeeper extracts them.
- Runny — liquid, either naturally slow to set or recently extracted or gently warmed.
- Crystallised or set — granulated naturally, with a texture from fine and smooth to coarse and gritty depending on the honey.
- Creamed or soft set — deliberately seeded with fine crystals and stirred so it sets smoothly rather than coarsely. A controlled version of a natural process, not an additive.
- Thixotropic — a genuine physical oddity. Heather and manuka honeys form a gel at rest and liquefy when stirred, then set again. It is why heather honey is pressed rather than spun.
- Comb and chunk — honey still in the wax the bees built, either whole or as a piece suspended in liquid honey.
Processing, and the word raw
After extraction, honey may be strained coarsely, filtered finely, pasteurised, or pressure-filtered to remove pollen entirely. Each step trades something: filtering and pasteurising delay crystallisation and produce the clear stable liquid a retailer wants, at the cost of pollen and most of the aroma volatiles. Neither changes the sugars meaningfully.
