Honey in baking
Honey in baking is a substitution problem before it is a flavour one. It is sweeter than sugar, it brings water, it is acidic and it browns early, and each of those changes something in the recipe.
The principle
Substituting honey for sugar changes four things at once — sweetness, liquid, pH and browning — and a recipe that ignores any of them fails in a predictable way.
Why this works the way it does
Honey is roughly a quarter sweeter than sucrose by weight, so less is needed. It is also seventeen to twenty per cent water, so other liquid has to come down or the batter is slack. It is acidic, which reacts with bicarbonate of soda and can leave a soapy taste if the balance is wrong or a flat crumb if there is no acid left to react. And its fructose browns at a much lower temperature, which is why honey cakes are darker and why the oven usually needs to come down by around 15 °C.
What honey gives back is keeping quality. It is hygroscopic — it pulls water from the air and holds it — so honey cakes and biscuits stay soft for days longer than their sugar equivalents. That is the reason honey persists in traditional baking across Europe and the Middle East long after sugar became cheap, and it is a functional advantage rather than a nostalgic one.
Flavour survival is the disappointing part. Long baking at temperature destroys most of the aromatic compounds that distinguish one honey from another, so an expensive floral honey in a cake tastes of generic honey. The honeys worth baking with are the ones whose character is structural rather than aromatic: buckwheat, chestnut, the honeydews and the dark heathers all come through an oven recognisably.
The exceptions are the bakes where honey is added after the heat. Baklava is soaked in syrup once baked; honey cake glazes go on warm; a honey buttercream never sees an oven at all. Those are the places to use the good jar.
