The principle

Pick the honey for the mechanism, not the meal. Browning wants fructose, tenderising wants acid, emulsifying wants viscosity, curing wants osmosis — and different honeys are better at each.

Why this works the way it does

Honey's usefulness in technique comes from four properties that travel together: a high fructose share that browns early, a pH between 3.4 and 4.5, a viscosity high enough to stabilise an emulsion, and an osmotic pull strong enough to draw water out of cells. Every technique below leans on one of them.

The choice of honey follows from which property is doing the work. If it is browning, any honey with a high fructose share will do and a cheap one is correct. If it is acidity — in a dressing or a marinade — the acidic honeys earn their place, and the catalogue records acidity on every record for that reason. If it is viscosity, a thick honey holds an emulsion where a thin one will not.

The failure modes are consistent enough to list. Glazes burn because they went on too early. Marinades fail to penetrate because honey is viscous and needs thinning with an acid or a liquid. Dressings split because the honey went in after the oil rather than before. Cures go wrong because honey's own water content was not counted against the salt.

None of these are matters of taste, which is why they are gathered separately from the food pairings. They are the parts of honey cookery that can simply be got right.
