Is darker honey healthier?

Where the belief comes from

From a real finding, over-extended. The correlation between honey colour and phenolic content is well established and easy to measure, and 'high in antioxidants' has been one of the most commercially useful phrases in food marketing for thirty years. The step that fails is the one from an assay result to a person.

What is actually true

Colour in honey comes largely from plant pigments, phenolic compounds and minerals in the nectar, so a dark honey is dark partly because it contains more of them. Buckwheat, chestnut, avocado and the honeydew honeys measure substantially higher in total phenolics and in standard antioxidant assays than acacia or clover. That relationship is consistent and not in dispute.

Why it does not follow that they are healthier

  • The quantities are small. A tablespoon of even the darkest honey contributes a fraction of what a cup of tea, a handful of berries or a piece of dark chocolate does.
  • Antioxidant assays measure chemical behaviour in a test tube, not what happens after digestion and absorption. Many phenolics are poorly absorbed and rapidly metabolised.
  • No clinical trial has compared dark and pale honey on any health outcome. The comparison simply has not been made.
  • The sugar dominates. Around 80% of any honey is sugar, and at realistic intakes that is the fact with physiological consequences.

What darkness does reliably tell you

That it will probably taste stronger, that it is probably higher in minerals, and that it will probably work better with cheese than in tea. Those are useful things and they are about eating rather than about health. Buy dark honey because you want malt, molasses and bitterness — chestnut, buckwheat, pine honeydew — and not because of a number in a laboratory.
