Oak honeydew honey
Earthy, salty and barely sweet, with a bitter-mineral depth and a finish more like a stock or a yeast extract than a sweetener.

The darkest and most mineral honey in wide production, and the one that tastes least like what most people mean by honey. Oak honeydew is collected by bees from aphid and scale-insect excretions on oak leaves and bark across the Mediterranean and the Balkans, and the result is near-black, barely sweet, and heavy with a salty-earthy depth. It has the highest mineral content of any honey commonly sold.

Where it comes from
- Floral source
- No flower. The sap originates in various oak species — Quercus ilex, Q. pubescens, Q. frainetto and others — and passes through sap-feeding insects before a bee ever touches it.

- Greece, Turkey, Spain, Italy, Bulgaria, Serbia and Croatia, wherever mature oak woodland persists.

Governed by the sap-feeding insect population and by humidity, not by any flowering. A dry summer can eliminate the flow entirely.

- Worked over bark and foliage rather than flowers, and available through the day rather than in a morning nectar window. As with all honeydew, taking too much and leaving the rest as winter store is a genuine husbandry risk in colder regions — less so around the Mediterranean, where colonies fly in winter.

What to do with it
Closer to a condiment than a sweetener. Its savoury depth makes it genuinely useful in marinades and glazes, and it is the natural partner for the strongest cheeses. It is a difficult first honey and a rewarding tenth.
