Why has my honey separated into layers?

Almost always partial crystallisation: glucose comes out of solution and sinks, leaving a wetter, runnier, fructose-rich layer on top. It is not spoilage and stirring or gentle warming fixes it. The one exception is fermentation — froth, a sharp cidery smell, and a lid that has bulged — and that honey should be thrown away.

Where the belief comes from

Separation in most foods means it has gone off, and honey's reputation for lasting forever makes any change look alarming. Both instincts are reasonable and both are wrong here — but only until you smell it.

The differential, in the order to check it

  1. Smell it firstSharp, yeasty, cidery or alcoholic means fermentation. Everything else on this list smells of honey. If it smells of honey, nothing here is a safety problem.
  2. Grainy bottom, clearer topPartial crystallisation. Glucose crystallises first and is denser, so it settles; what remains above is the fructose-rich, wetter fraction. Common in honeys that set slowly and in jars that have been half used.
  3. White specks or a white film against the glassFrosting — tiny air bubbles caught at the crystal surface. Purely cosmetic, more common in raw and unfiltered honey, and harmless.
  4. A layer of pale foam on the surfaceAir whipped in during extraction and bottling, risen over time. Skim it or stir it back in.
  5. Froth, bubbles rising, a bulging lid, a sour smellFermentation. Osmotolerant yeasts have become active because the honey is above roughly 20 per cent moisture — either it was bottled too wet, or it absorbed water from a damp kitchen or a wet spoon. Discard it.

What to do about the harmless kinds

  • Stir it. For a partly set jar this is often enough, and gives a rough creamed texture.
  • Warm it gently. A jar standing in water at 40 °C or so will re-liquefy over an hour. Hotter is faster and costs aroma and enzymes.
  • Do not microwave it. Heating is uneven, local temperatures go far higher than intended, and the aroma goes with them.
  • Store it cupboard-warm, not cold. The fridge is the fastest way to set honey, because 10-15 °C is close to the peak crystallisation rate.
