Rapeseed honey
Very sweet, very mild, faintly cabbage-like when fresh and cleanly bland once set. Texture is what it has instead of flavour.
The fastest-setting honey in common production, and the one most often hidden inside something else. Rapeseed honey granulates so quickly that it can go solid in the comb before a beekeeper extracts it — a genuine operational problem, not a quirk. Almost all of it is sold creamed or blended, which is why a honey produced in enormous quantity across northern Europe is rarely seen under its own name.

The highest glucose share of any common honey, with a glucose-to-fructose ratio around 1.0 to 1.1 and a low moisture content that makes the solution more supersaturated still. Nucleation begins almost immediately after extraction and can begin inside the comb. Fine crystals, so the set is smooth rather than gritty — which is why it is the preferred base for commercial soft-set honey.

Very early and very heavy. Beekeepers must extract promptly — a week's delay can mean the honey has set hard in the frames.

- A vast, concentrated and early flow that can build colonies rapidly at the start of the season. The same concentration is a weakness: once the field is over, a landscape of nothing but oilseed rape offers very little, which is the practical face of the monoculture-and-forage-gap problem.

Most of the UK and northern European crop goes into blended and soft-set products rather than being sold as a named monofloral, which is why so few readers have knowingly eaten it.
What to do with it
A spreading honey and a baking honey. Its virtue is a fine smooth set that behaves like butter on bread; expecting flavour from it is a category error.

A honey with essentially no history before the 1970s. Oilseed rape acreage expanded dramatically across Europe from that decade, and a new and difficult honey arrived with it — one that forced beekeepers to change their extraction timing and their marketing.
