Heather honey
Strong, smoky and slightly bitter, with a lingering woodfire-and-toffee character. One of the most complex honeys produced anywhere.
The most physically unusual honey in northern Europe. Ling heather honey is thixotropic: it sets to a stiff jelly at rest and turns liquid when stirred or shaken, then stiffens again once left alone. That single property changes everything about how it is harvested, sold and eaten — it cannot be spun out of the comb like other honey, so it is pressed or worked loose first, and it reaches the jar full of fine air bubbles that give it a characteristic amber glow.

Colour, texture and crystallisation

Deep amber with a reddish-orange cast, often glowing rather than dark because of the air bubbles suspended in it.
On setting: Does not granulate in the usual way. The gel stiffens with age rather than forming distinct crystals.

The defining property. A spoon meets resistance, then the honey suddenly loosens under agitation and flows; left alone for a few minutes it sets again. This is not a fault and not a sign of adulteration — it is a protein-driven gel structure specific to Calluna honey.

Heather honey has a high protein content and an unusually high moisture content — honey standards allow up to 23% water for heather where the general limit is 20% — and its gel structure interferes with ordinary crystal formation. It stiffens with age without granulating the way a clover honey does.

The higher permitted moisture limit for heather honey is written into both the Codex standard and the EU directive, precisely because its gel structure resists the fermentation that would normally follow that much water.

Where it comes from
- Floral source
- Calluna vulgaris, ling heather. Bell heather (Erica cinerea) yields a separate and darker port-wine coloured honey that is not thixotropic and is sold under its own name where it is distinguished at all.

- Moorland heather is a huge but weather-dependent resource: it needs warmth and humidity to yield, and a cold August produces nothing. Colonies are moved onto the moors specifically for it, in a practice several centuries old in both Britain and Germany.

Because thixotropic honey will not leave the comb in a centrifuge, it is either pressed — which destroys the comb — or loosened first with a perforated agitator and then spun. Both are slow. Cut comb is common for the same reason, and the labour is a large part of why heather honey is among the most expensive in Europe.
What to do with it
Too expensive and too complex to cook with. Eat it cold on a spoon, on oatcakes, or with cheese, and let the texture be part of the experience. It is the honey in a traditional Atholl brose and in cranachan.

History and traditional use
Moorland transhumance for heather honey is old: German Heidelmker moved colonies in skeps onto the Lüneburg Heath, and Scottish and northern English beekeepers took hives to the moors for the August flow. Both traditions survive, and both remain at the mercy of the weather in a single month.
