Why is honey sticky?

Because it is a concentrated sugar solution with very little free water. The sugar molecules form extensive hydrogen bonds with each other and with any surface they meet, which produces both high viscosity and adhesion — and it is why water dissolves honey instantly.
The chemistry
Honey is roughly 80 per cent sugar and 17 per cent water. At that concentration almost every water molecule is bound to a sugar molecule rather than moving freely, and the sugars — glucose and fructose, both rich in hydroxyl groups — hydrogen bond extensively with each other.
That network resists flow, which is viscosity, and it forms readily with the hydroxyl and polar groups on most surfaces, which is adhesion. Stickiness is those two properties together.

The temperature effect is why honey from a cold cupboard barely pours and the same jar left in a warm kitchen runs freely. Nothing has changed except the viscosity.
