Why honey has different textures

Runny, set, creamed, thixotropic and comb are five different things, and only one of them is a processing decision. The rest follow from sugar chemistry and from what the bees put in the jar.

Why some honeys set and others do not

Honey is a supersaturated sugar solution: it holds more sugar than it should be able to. Glucose is the less soluble of the two main sugars, and over time it comes out of solution as crystals. Whether that happens in weeks or in years depends on the ratio of glucose to fructose.

Below roughly 0.5, honey stays liquid almost indefinitely. Above roughly 1.0, it may set before it can be extracted. Acacia sits near 0.6 and stays liquid for years; rapeseed sits near 1.1 and can granulate in the comb.

Thixotropy, which is the strange one

Heather honey and manuka are thixotropic: they behave as a gel at rest and turn liquid when agitated, then set again. This is caused by proteins in the nectar forming a loose network, and it is a property of the honey itself rather than anything a producer did.

It has a practical consequence. Thixotropic honey cannot be spun out of the comb in an ordinary extractor without first being agitated in the cell, which is why heather honey is either pressed or worked with a perforated needle roller — and why it costs what it does.

Creamed honey, which is the one that is done to it

Creaming is a controlled crystallisation. A small quantity of finely crystallised honey is stirred into liquid honey, seeding it so that it sets with very fine crystals rather than coarse ones. The result spreads rather than runs and never gets gritty.

Nothing is added except honey. Creamed honey is not a lesser product, and in several markets it is the default expectation — Bashkir linden honey and Nordic honey are both usually sold set.

What texture tells you about quality

Very little on its own. A liquid jar of a fast-setting honey in March is more informative: it suggests the honey has been warmed. Coarse gritty crystals suggest slow setting at an unhelpful temperature rather than anything wrong. The one texture that genuinely signals a problem is frothing with an alcoholic smell, which means fermentation and too much moisture.
