A group of related aroma and taste characters used to classify honeys.

Definition

This catalogue assigns each honey one or more of eighteen families — floral, fruity, citrus, herbaceous, vegetal, resinous, woody, nutty, caramel, malty, spicy, phenolic, animal, mineral, smoky, molasses, buttery and waxy. Families are assigned from the sensory profile rather than from the honey's name, which is why avocado honey sits under molasses.
