Definition
Near-transparent honey. Almost always very mild, because the same trace minerals and phenolics that darken a honey also give it flavour. Blue curls, some acacia and dzidzilché honeys reach this grade. A water-white honey is not thereby better or purer; it is simply low in everything but sugar.
