The physical sensation of honey in the mouth, separate from its taste.

Covers viscosity, how quickly it dissolves, crystal size if set, and any astringency. A coarse-crystallised honey feels gritty; a creamed one feels smooth at the same sugar composition. Kiawe and ak bal honeys are bought largely for mouthfeel rather than flavour.
