Definition
Also called the finish. Short in mild honeys such as acacia, very long in chestnut, leatherwood and the honeydews. Persistence is largely independent of intensity — a honey can hit hard and disappear, or arrive quietly and stay for a minute — and it is one of the things trained tasting panels score separately.
